Stuffed chicken breast rolls recipe – tender chicken fillet baked with mushrooms and onion. Quick and easy!
- 2 chicken fillets
- 1/2 cup mushrooms (sliced)
- 1 onion
- 2 tablespoon vegetable oil
- salt, pepper, spices to taste
Slice the onion into thin half rings and fry it with vegetable oil until tender. Add mushrooms and simmer for 10 minutes on low heat. Season with salt and pepper, stir.
Cut each chicken fillet into 3 slices horizontally. Lay the fillet between two sheets of plastic wrap. Pound each fillet using a mallet until thin, taking care not to tear holes into the meat. Season chicken fillet with salt, pepper and spices.
Put some mushrooms onto each slice of the fillet and roll them. Fix each roll with a toothpick.
Cover the baking sheet with foil and put the rolls. Cover the rolls with another sheet of foil and bake in a preheated 180 degrees C (356 degrees F) oven for 20 minutes. Remove the upper foil and bake for 10 minutes until golden.
