Cold calamari salad recipe – quick and easy recipe of tasty layered salad with calamari, mushrooms, cheese and walnuts. Great appetizer for every occasion!
(for 4 serving)
- 1 pound calamari (sliced into thin rings)
- 1/2 cup chopped walnuts
- 3/4 cup mushrooms (sliced)
- 1 cup Parmesan cheese (grated)
- 1 large onion (chopped)
- 1/2 cup mayonnaise
- 3 tablespoon vegetable oil
- 1 1/2 teaspoon salt (more to taste)
Boil water, add 1 teaspoon salt. Cook calamari in a boiling water, uncovered, 60 – 90 seconds. Drain in a colander and immediately transfer to a bowl of ice or under cold water to stop cooking. When calamari are cool, drain and clean it. Cut calamari into thin rings.
Fry the onion in vegetable oil until translucent. Add mushrooms, salt and fry for 5-7 minutes, stirring. Set aside to cool.
Walnuts fry in a dry frying pan for 1 minute.
Into individual salad bowls layer mushrooms with onion, calamari and cheese. Each layer spread with mayonnaise. Sprinkle with walnuts.
Serve immediately or refrigerate for 1-2 hours.
