Aromatic, juicy, piquant! Yes, this is how to make delicious duck legs with cranberry sauce!
Duck meat seems harsh, but if you marinate it, then the duck becomes very tender and tasty.
This dish is easy to cook, but takes a long time to marinate. Just put the meat to marinate in the morning and you can cook it for dinner.
Duck legs with cranberry sauce recipe
Ingredients:
- 4 duck legs
- 100 ml olive oil
- 200 ml dry white wine
- thyme (few sprigs)
- laurel leaves (2-3)
- pepper, rosemary, cloves – to taste
sauce:
- 1/2 kg apples
- 1 cup cranberries (fresh or frozen)
- 200 ml water
- 2 tbs lemon juice
- salt, pepper to taste
Method:
Mix oil, wine and spices.
Wash the duck legs, dry and rub with olive marinade. Do not salt! Send the legs to the refrigerator to marinate for 8-10 hours.
Salt the pickled duck meat, place in a baking bag, cover with marinade and bake in the oven for an hour and a half at 180 degrees.
Open the bag and spoon out the fat and marinade. Roast the duck open for a few more minutes, until you get a golden, appetizing crust.
While the duck is baking, prepare the sauce. Peel the apples, core and cut into pieces. Put apples and cranberries in a saucepan, cover with water, add salt, pepper and a lemon juice. Bring to a boil, reduce heat, and simmer until apples and cranberries are tender (about 20 minutes). Grind the mixture with a blender until smooth.
Serve the duck with the sauce. Garnish with fresh aromatic herbs. This dish goes well with vegetables or rice.
