Beef and vegetables stew recipe – recipe of hearty and healthy beef stew with pumpkin and zucchini. It’s easy enough to make on a weeknight.
Ingredients
- 1 pound lean beef (cut into chunks)
- 10 ounce fresh pumpkin (cubed)
- 1 cup chopped cabbage
- 1 cup zucchini (diced)
- 3 potatoes (cubed)
- 1 carrot (chopped)
- 1 onion (chopped)
- 1 cup fresh dill and parsley
- 3 cup water
- 2 tablespoon vegetable oil
- salt and pepper to taste
Method
Fry the beef in preheated vegetable oil in a deep frying pan for 5 minutes. Add the onion and carrot, season with salt and pepper. Cook 10 minutes over medium heat. Pour water, cover the lid and simmer 20 minutes.
Add the pumpkin and zucchini, simmer for 10 minutes. Add the potatoes and cabbage. Continue to simmer about 20 minutes until potatoes are tender. Turn off the stove and leave the stew under the lid closed for 10-15 minutes.
When serving, sprinkle with fresh herbs.
