Asparagus soup recipe – luxurious creamy asparagus soup of this recipe quick and easy to cook. This soup will be the favorite!
Ingredients (4 serving)
- 1 pound fresh asparagus (trimmed and cut into 2 1/2 inch pieces)
- 1 leek (chopped)
- 2 ounce fresh spinach
- 6 cup chiken broth
- 4 boiled eggs (halved)
- 2 cloves garlic (chopped)
- 1/3 cup heavy cream
- 2 tablespoon unsalted butter
- salt to taste
- 1 pinch ground black pepper
- greens (optional)
In a large saucepan, melt the butter. Cook and stir onion into melted butter until translucent (about 5 minutes). Add asparagus, cook and stir about 2 – 3 minutes. Add the broth, garlic, salt and pepper. Cook about 6 minutes (until asparagus are tender). Add spinach leaves and cook 1 – 2 minutes.
Leave a few pieces of asparagus for garnish. Pour the soup into a food processor and puree. Add the heavy cream and stir.
Serve the soup with egg, asparagus and greens on top.
