Potato and carrot soup recipe – a best choice for a delicious lunch. Gentle creamy taste, vegetables and chicken broth – this soup puree is great!
- 2 tablespoons butter
- 1 onion (chopped)
- 6 cups chicken broth
- 5 carrots (peeled and sliced)
- 3 potatoes (peeled and sliced)
- 1/2 cup heavy cream
- salt and pepper to taste
Melt butter, cook and stir onion about 5 minutes on a medium heat.
Add the carrots, potatoes, salt and broth, and simmer until vegetables are tender, about 30 minutes. Uncover, and cool for 15 minutes.
Blend soup in food processor until smooth. Add cream into the soup and stir. Return to soup pot, and simmer about 20 minutes.
Season with pepper, and serve with croutons.
