
Tasty and healthy dish for lunch – Creamy Tomato Soup Recipe.
Ingredients
- 50 g butter
- 50 ml of vegetable oil
- 1 1/2 cups chopped onion
- 750 g tomatoes
- 1/2 cup chopped basil leaves
- 1 cup heavy cream
- 3 cups chicken or vegetable broth
- 2 tbsp tomato paste
- salt and pepper to taste
- a few leaves of fresh parsley
Method
Tomatoes are scalded with boiling water, peel, cut into quarters (cut the stalk).
Melt the butter and olive oil in a large saucepan over medium heat. Add the onion and cook until tender.
Add the tomatoes, chopped basil, salt and pepper. Pour broth, add 2 tablespoons tomato paste, reduce the heat to low and cook about 15 minutes.
Place your soup to a blender (or use food processor) and begin puree. Return to the pot and bring to a boil. Reduce heat to low and slowly add, stirring, heavy cream. Remove from heat. Pour the soup into bowls. Garnish each serving with parsley leaves.
