Beetroot and avocado vegetarian burger recipe – recipe for yummy burger with black buns, lightly avocado dip and beet patties!

Ingredients

  • 4 black burger buns
  • 1 tomato (diced)
  • 1 cup fresh greens (basil, romaine leaves etc)

For the beet patties:

  • 2 cups cooked beetroot (shredded finely)
  • 1/2 cup cooked brown rice
  • 1/2 onion (finely chopped)
  • 2-4 tablespoons rolled oats or breadcrumbs
  • 1 tablespoon olive oil
  • 1 egg
  • 1 garlic clove (crushed)
  • 2 teaspoons lemon juice
  • salt and ground pepper to taste

For the avocado dip:

  • 2 ripe avocados
  • 3 tablespoons lemon juice
  • 1 garlic clove, minced
  • 1/4 teaspoon chili flakes
  • salt and ground pepper to taste

Method

Preheat the oven at 350°F (180° C) and line a baking sheet with parchment paper or foil. Set aside.

In a bowl mix all ingredients for beet patties and stir to combine. If the texture is too mushy add more rolled oats or breadcrumbs until you obtain the desired consistency. Shape the burgers and place them on a lined baking sheet. Bake in the oven for 15 minutes on one side, then flip over and bake for 15 more minutes.

Mash the avocados with a fork, and season with lemon juice, salt, pepper and chili flakes.

Place greens on a bun bottoms, spread the avocado dip, add the beet patties, and spread the second layer of avocado dip. Place tomato slices. Add some green leaves and serve.
