Pumpkin soup puree recipe – easy recipe for healthy dinner every day. This soup is smooth and flavorful. Serve with crusty bread and enjoy!
- 1 pound sugar pumpkin (peeled, seeded and cubed)
- 1 medium carrot (peeled and cubed)
- 1 pound potatoes (peeled and cubed)
- 1 onion (chopped)
- 1/2 cup chopped celery
- 3 tablespoon vegetable oil
- 1 quart water
- salt to taste
Pour the water into a saucepan, put the potatoes, salt to taste and bring to a boil. Reduce the heat.
Fry the onion into a vegetable oil until golden. Add the carrot, pumpkin and celery and cook about 10 minutes over medium heat.
Transfer the vegetables into a pot with potatoes and cook everything together until the potatoes are ready. Set aside about 10 minutes.
Puree the soup in a blender or food processor until smooth. Serve with croutons and fresh herbs.
