Banana oatmeal cookies recipe – recipe for healthy cookies without flour. As necessary, use the gluten free oats.
- 1 cup quick-cooking oats
- 1/4 cup cottage cheese
- 1 egg
- 1 banana
- 1/3 cup kefir
- 2 tablespoon raisins
- 3 tablespoon sugar
- 2 tablespoon vegetable oil
- 1/2 teaspoon baking soda
- pinch of salt
Grind the oatmeal into flour. Cut banana into slices.
Whisk together banana and kefir.
In a bowl mix cottage cheese, sugar and salt. Add oatmeal, baking soda and banana and kefir puree. Mix thoroughly.
Beat the egg, add into the dough, leaving one teaspoon of egg in a bowl. Add raisins into the dough and stir. The dough should be thick.
Preheat oven to 356° F (180° C). Line a baking pan with parchment paper.
Form the balls from the dough and flatten slightly with fingers. Grease the top of cookies with the remaining beaten egg.
Bake about 30 minutes until golden.
