Meatball soup recipe – recipe for hearty soup. Meatballs and golden broth with potato, green peas and fresh herbs. Gluten free soup recipe for tasty dinner.
- 1/2 pound ground meat
- 2 onion (chopped)
- 1 egg
- 2 tablespoon white rice
- 3 potatoes (peeled and diced)
- 1 carrot
- 3 tablespoon grean peas (fresh or frozen)
- 1/2 cup fresh dill and parsley (chopped)
- salt and ground black pepper to taste
- 6 tablespoon vegetable oil
- 5-6 cup water
Cook the rice in a boiling water about 8 minutes (use 1 cup of water), drain. Mix ground meat and rice, add the egg, season with salt and pepper, stir thoroughly. Shape into small meatballs.
Heat the half of oil and fry meatballs over medium heat on both sides.
Boil the water (about 4-5 cups), add salt. Add potatoes and cook 5 minutes over medium heat. Add meatballs and green peas. Bring to a boil. Reduce heat, and simmer 10 minutes.
While the meatballs are cooking, heat the remaining oil, and fry the onion until golden. Add carrot and fry about 2 minutes.
Add the carrot and onion into soup and cook about 10 minutes.
Turn off the heat and leave the soup under the lid closed for 15 minutes.
When serving, sprinkle soup with fresh herbs.
