Mixed vegetable fritters recipe – recipe for easy to make tasty fritters with zucchini, green peas and carrot. Perfect as an appetizer.
- 1 pound zucchini (peeled and grated)
- 1 cup green peas (fresh or frozen)
- 1 carrot
- 2 eggs
- 1 1/2 cup flour
- 1/2 teaspoon baking soda
- 3 tablespoon kefir
- 4 tablespoon fresh dill and parsley (chopped)
- salt and spices to taste
- vegetable oil for frying
Cook peas in the salted boiling water until tender (about 5 minutes), drain.
Cook carrot in the salted boiling water about 10 minutes, peel and finely grate.
Beat eggs, add kefir, flour, baking soda, salt and spices. Add dill and parsley, peas and grated zucchini, stir.
Heat the oil in a frying pan. Spoon the batter into the oil and fry over medium heat until golden brown (about 2 minutes each side).
Serve with sour cream or plain yogurt.
